Rice Khichdi Recipe:

Ingredients:
2/3 cup Rice
1/3 cup Moong Dal (split green gram with skin)

2 tablespoons Ghee
Salt to taste

Directions:

1. Take 2/3 cup rice and 1/3 cup moong dal in a bowl.

2. Wash them in water for 3-4 times.

3. Deplete and exchange them to a pressure cooker (3-5 liter capacity). Include turmeric powder, 1 teaspoon of oil, 3½-cups water, and salt. Blend well and taste the water for salt; include more if required. If you like exceptionally delicate khichdi (like thick gravy), include 4 cups of water.

4. Near the cover of the pressure cooker cook for 4 shrieks (1st shriek on tall fire and remaining 3 shrieks on medium flame).

5. Turn off the fire and let the steam pressure come down actually. It will take around 8-10 minutes. If you do not hold up and open the top instantly, khichdi may stay raw. Carefully open the top, include ghee, and blend well. Moong Dal Khichdi is prepared, and served with Gujarati kadhi and papad.

Tips and Variations:

  • If you need to make khichdi in a bigger amount, take after the given proportion. For 1 cup of rice, include 1/2 cup dal (half the sum) and 3½ times water (5½ cups) for the dal-rice mixture.
  • If you like exceptionally delicate khichdi (like thick gravy), include 4 cups water instead of 3½-cups water.
  • Add 2 tablespoons toor dal (pigeon pea lentil) in step 1 for variation.
  • Add the hardening of cumin seeds, curry leaves, chopped garlic over arranged hot khichdi for variation.

Taste: Soft and salty with a nice smell of ghee

Serving Ideas: Serve plain and straightforward khichdi with aloo curry, papad and spiced buttermilk as a light and sound supper. It is a culmination of nourishment for babies and kids too.
